MY NANAY’S LECHE FLAN

10 egg yolks (use XL / Jumbo yolks, or add 1 to 2 more if using medium)
1 tall can evaporated milk
2 cans (380/ 390 grams) condensed milk
zest of 3-5 Dayap, OR zest of 2 lemon

2-4 tablespoons sugar per Llanera (leche flan mould), for caramelizing
