I used to make regular chia pudding all of the time, but now that we’ve started making this version with yogurt, there’s no looking back. Yogurt Chia Pudding is just as easy, but thicker, creamier and, if you use Greek-style yogurt, packed with protein.
This is a perfect mid-day pick me up, afternoon snack, or healthy dessert. It packs well in a lunchbox, too, and makes a great alternative to a sugar-filled yogurt squeeze tube. (It’s sweet, but you control the sugar!)
Making this takes all of 5 minutes active cooking time and some waiting. It’s so worth it! You’ll need:
* 5-6 ounces Greek-style yogurt (preferably plain)
* 1/4 cup milk of choice (I love using a combo of almond and coconut)
* 2 tablespoons chia seeds
* 1 tablespoon honey (or maple syrup; you can adjust to taste)
* 1/2 teaspoon vanilla extract
